fasting period, it was customary to eat fat and party to excess (hence Mardi
Gras!). It was also necessary to use up the products that would no longer
be used for a while, such as eggs, oil, butter… And what do we quickly do with
these good products? Pancake and donut batter of course!
For 4 people, you need:
250 g of flour / 1 egg / half a packet of
yeast / 1.5 tablespoons of sugar + half a packet of vanilla sugar / 75 g of
melted butter / 1 tablespoon of rum / 8 cl of milk / a pinch of salt / the zest
of a lemon.
- Mix in a robot flour, salt, sugars and
yeast.
- Add the egg, butter, lemon, rum and milk.
- Work the dough so that it is elastic,
then let it rest for 30 minutes.
- Roll out the dough to a thickness of 5 mm. Cut
into strips of 10 cm by 4 cm and make an incision in the center.
- Immerse the bugnes in the
frying. Drain them in absorbent paper.- Add icing sugar before tasting.

For 4 people, you need:
10 cl of liquid cream / 1 egg / 1 pinch of salt, 1 pinch of sugar / 25 g of
melted butter / the zest of a lemon / a teaspoon of kirsch / 150 g of plain
flour.
- Mix all the ingredients, except the
flour, in a bowl.
- Quickly add the flour and knead the
dough.
- Leave to rest for at least 1 hour.
- Roll out the dough as thin as possible
and cut out rectangles or circles with a cookie cutter.
- Incise the pieces.
- Immerse them in hot oil.
- Drain and sprinkle with icing sugar
before tasting.

For 4 people, you need :
500 g of flour / 10 g of baker's yeast / 1 tablespoon of orange blossom water /
1 pinch of salt / 100 g of caster sugar / 1 glass of water lukewarm.
- Dissolve the yeast in lukewarm water.
- Arrange the flour in a fountain, and add
the water with the yeast, salt and orange blossom. Work the dough.
- Form a ball and let stand for 2 hours.
- Fill a piping bag (wide opening) with the
dough. Press the dough into a sausage shape in the hot oil. Cut the
dough with a scissor every 10-15 cm.
- Let brown, and drain.

For 4 people, you need:
200 g of flour / 40 g of melted butter / 2 eggs / 50 g of sugar / half a sachet
of baking powder / 2 tablespoons of orange blossom water.

On the light
side
For more lightness in your confections,
replace part of the liquid in your recipe with beer or sparkling
water. Your donuts will be aerial! On the contrary, if you can't
resist the softness, use milk and nothing else for an even more greedy result.
Yeast side
Baking powder is ideal for inflating your
donuts and adding crispiness. Baker's yeast will give your pastries a more
brioche-like appearance and taste.

Donut dough often needs to rise 1 hour 30
minutes before being shaped. Don't skip this crucial step. Be patient!
Fryer or
saucepan?
Both are possible. Nevertheless, with
a saucepan, equip yourself with a skimmer or a spider.
Oil, yes, but which one?
Grapeseed oil is the best option for such
frying, as it withstands heat very well.
Sunflower or peanut oil are the easiest to
find and they allow you to fry your donuts. However, they weigh down the
preparation a little (a little!).
Coconut oil is also a good option, if you
consume it organic, otherwise it is too saturated.
A matter of
temperature
Donuts are ideally fried at a temperature
between 160° and 170°C. The best is still to do a test with a little
batter, before starting all your frying.
Icing sugar in extremis
If you want to sprinkle your donuts with
icing sugar for an even more festive look, wait until your sweets cool
down. If you put it in too soon, the sugar will simply be absorbed by the
hot dough.
